MAKES 16 V C
1½ sticks low-fat margarine, plus extra for greasing
3 tbsp honey
¾ cup raw brown sugar
scant ½ cup smooth peanut butter
3 cups rolled oats
heaping ¼ cup chopped plumped dried apricots
2 tbsp sunflower seeds
2 tbsp sesame seeds
1. Preheat the oven to 350°F/180°C. Grease and line a 8½-inch/22-cm square baking pan.
2. Melt the margarine, honey, and sugar in a saucepan over low heat. When the sugar has melted, add the peanut butter and stir until everything is well combined. Add all the remaining ingredients and mix well.
3. Press the mixture into the prepared pan and bake in the preheated oven for 20 minutes. Remove from the oven and let cool in the pan, then cut into 16 squares and serve.
