Red bell pepper and radicchio salad

2 red bell peppers
1 head radicchio, separated into leaves
4 cooked whole beets, cut into matchsticks
12 radishes, sliced
4 scallions, finely chopped
crusty bread, to serve
French dressing
6 tbsp olive oil
1½ tbsp red wine vinegar
1 level tsp superfine sugar
1 level tsp Dijon mustard
salt and pepper


1. Core and seed the bell peppers and cut into rounds.
2. Arrange the radicchio leaves in a salad bowl. Add the bell pepper, beets, radishes, and scallions. Mix all the dressing ingredients together and drizzle over the salad. Serve with bread.
